Our new interpretation of a traditional farmhouse ale, Trouble #6 is brewed with four cereals, barley, wheat, rye and oats, for a subtle and intriguing malt complexity. Alsatian hops add a spicy, earthy hop character, with light notes of lemon. Effervescent and dry.
MISSION PALE ALE
A session pale ale by design, this recipe commemorates the first time we brewed together, way back in February of ’05 on Mission St. in San Francisco. Balanced and round with mild bitterness, this pale presents a distinct and unique fruitiness from the hops, with notes of mango, orange, and pineapple.
A classic American style India Pale Ale — big and hoppy, yet nicely drinkable. We select four varieties of our favorite hops to present a big, dank and earthy aroma, juicy fruit on the palate, a subtle background of tropical fruit, and a clean, moderated bitterness. Balanced and round, with a moderate malt body.
A hoppy amber ale, Ricochet combines a delicate pine,resin, and orange hop character with toasty and fruity malts. The beer presents itself with light to medium body and finishes slightly bitter. A special beer for every day.
MONK BROWN ALE
Our twist on the under-appreciated brown ale style. To this smooth dark ale, thanks to the generous addition of oats, we combine a variety of French-kilned malts to impart a subtle malt complexity of roasted, toasted, and chocolate flavors. Finishes dry.
CLEM’S SUMMER WHEAT
Clem’s summer wheat is our first seasonal and will be available over July and August. The Mosaic hop gives this refreshing summer beer a strong fruity character, between white peaches and passionfruit.
It is available in June, July and August.
BRUMAIRE ET FRIMAIRE
Our fall seasonal is brewed with pumpkins, which are lightly roasted and added to the mash. The pumpkin adds fermentable sugars, subtle earthy aromas, and a smooth mouthfeel.
Brumaire et Frimaire pours a rich amber and exhibits subtle aromas and flavors of unrefined sugar and light toast, with notes of earthy spices, licorice, and vanilla. Finishes dry.
It is available from mid October to mid December.
MAKKURO EXTRA PORTER
A riff on the robust porter style, ours is hopped amply with Polaris and has a distinct black malt character. Earthy and eucalypic on the nose, this smooth porter pours pitch black, as the name suggests. Black malt adds a carbonic, lightly smokey finish.
It is available in January and February.
BEAUPRE SPRING PALE
Golden, hoppy pale ale breezily hopped with Cascade and Equinox. Crisp, floral notes of lemon, honeydew, and green pepper. Grassy and drying finish.
It is available in April and May.
CITRUS x PARADISI
A round and juicy wheat ale, brewed with the zest and juice of greek pomelos from our friends over at Profil Grec.
A very nice team work for juicing and zesting, and just a pinch of salt for a very nice balance between the roundness of the wheat and the acidity of the fruit
Oscillateur Harmonique Double IPA is strong bodied IPAwith resinous bitterness,with juicy and generous fruity notes on the nose. Simcoe, Citra, Sorachi and Aramis hops were sued for a powerful balance!
BLOOD ORANGE SWEET STOUT
A sweet stout brewed with the peel and the juice of blood oranges for a juicy mouthfeel and lactose for a round and velvety body.
DRINK SLOWLY AND SEE
An Irish red Ale brewed for the Motel Deck & Donohue, our special event that took place at Le Motel (8 Passage Josset 75011). A malty and caramelized ale with nutty and sweet overtones. A reference to The Velvet Underground and Andy Warhol’s famous banana to peel slowly and see !
Quxotic Lager is brewed exclusively for the Quixotic Projects group. It’s a non-filtered lager brewed with Aramis, Polaris and Citra hops.
DECK, PERLE & DONOHUE
This wet hop beer was brewed in collaboration with the brewery Perle. Every year, we go to Alsace to harvest wet hops. This year we used a variety called Barbe Rouge to bring notes of dark and citrus fruits.
A barrel age version of our farmhouse ale, Trouble #6, in barrels of Savagnin from the Jura region, given by Guillaume Overnoy.
The beer is still refermenting for now, last tasting notes are on their way !
Brilliant Corners is a base of our brown ale, Monk, aged for 8 months is barrels of Pinot Noir from the Alsace region. The beer keeps its original dry overtones of cocoa, but the barrel brings a round and woody finish, with resinous and winy notes.
Because our brown ale is a tribute to Thelonius Monk, it seemed fitting that our barrel aged version would bear the name of one of its best albums !
SAISON MERLOT CABERNET
Saison Merlot Cabernet is a base of saison beer, aged for 11 months in a barrel of Saint Emilion from Château Meylet.
A nice balance between the beerr itself, and the winy aromas coming from the barrel. The 11 months aging gives it a round and discret woody character. A beer designed in the same spirit as our first Saison Pinot Noir.
Nivôse is a base of our pumpkin autumn beer Brumaire et Frimaire to which we added toasted hazelnuts and rosehips.
A nice expressionof the base beer itself,with roasted and grilled notes from the hazelnuts and tewed fruits from the rosehips.
SAISON PINOT NOIR
Saison Pinot Noir d’Alsace is brewed with a base of our Trouble #6 and Saison yeast. It was then aged in a Pinot Noir barrel from the Domaine Agapé in Riquewihr – Alsace.
It is a great expression of the barrel itself, with a vinous and woody mouthfeel with subtle floral notes of vanilla on the finish.
LE TEMPS DES MERISES
Le Temps des Merises is a blend of our Trouble #6 and our Ricochet, brewed with Saison yeast. It aged on its own for 5 months in a barrel of Pinot Noir, and then 3 months more with wild cherries handpicked in the Montgardés farm.
It presents a very fruity nose, followed by a small tang coming from the cherries, and finally, a round and deep finish brought by the Ricochet Red IPA.
Ô Divin, a base of Trouble #6 brewed with Saison yeast and aged for 5 months onits ownin a barrelof Pinot Noir, and then 3 more months with Sauvignon lees from T. Puzelat from Clos Tue Boeuf, and given to us by the grocery shop Ô Divin.
The nose is very intense, thanks to the roundness of the lees, with velvety and greedy underlying notes of brioche on the finish, very close to an old Chardonnay.
LE SUREAU ET LE HASARD
Brewed with a base of Lager, Le Sureau et le Hasard was aged for 9 months in a barrel of Château Meylet, two of which it aged with elderberries handpicked at the Mont Gardés farm.
The nose is intense with notes of white fruits and peach. On the palate notes of nuts and walnuts are persisting.
A volcanic IPA brewed with Chile de Arbol chillies for the restaurants Paris New York, specially for Dia de Muertos !
5 ANS BELLEVILLE
Born from our collaboration with the Outland brewery, 5 ans Belleville celebrates the anniversary of the Belleville Brûlerie. It is an Extra Special Bitter round, with notes of malts and grass.
Brewed for the five-year anniversary of Brussel Beer Project, Hoppy Sour Saison is a sour, an acidic beer into which was infused Aramis and Equanot hops, and fermented with saison Belgian yeasts. The result is beeer with lemon/lime and grapefruit notes, very close to a fresh lemonade.
EL PLACER DE LA PLAYA
El Placer de la Playa, named after the radio show that Thomas and Mike co-hosted for their campus radio during their studies back in 2002, is a very tropical IPA, strengthen by the infusion of toasted coconut at the end of fermentation.
Pivo Kazbek is a pilsner brewed with 100% of organic pilsner malts, with a stronger hoppy character than classic Pilsner. We worked with a new variety of Czech hops called Kazbek that we found during our journey there back in April, that we added as a dry hop.
WAS IST KVASS?
Slightly acidic, Was ist Kavass? Is our own interpretation of this beverage to which our deliverer Anatolie introduced us, a symbol of is home country of Moldavia! Brewed with malted rye, Sorachi Ace hop and bread given by the fantastic team over at Ten Belles Bread !
Walden is a beer brewed for our friend over at Paris New-York. It has a malty character, with hints of caramel. The use of the French Nugget hop turns it into an aromatic beer with notes of dark fruits, with little bitterness.
Verre Volé was born from a conversation with Thomas from the Verre Volé grocery shop back in 2013, about his will to to be able to propose a smoked ale to his clients. Five years later it is finally brewed, a blond ale smoked with vine stocks by our brewing team !
Brewed with the zest of fresh bergamot oranges given by the great team of the shop Profil Grec, and Citra hops for a fresh saison, zesty and creamy !
ANNIVERSARY INDIA PALE ALE
Brewed the four-year anniversary of the brewery, an intense IPA with hints of citrus and tropical fruits. Creamy and hoppy, it has a marked bitterness on the finish.
ANNIVERSARY WEE HEAVY
Brewed for the four-year anniversary of the brewery, Wee heavy is inspired by Scottish brown ales, notes of roasted malts and dark fruits , with a sweet and balanced finish.
Brewed for the four-year anniversary of the brewer, Session is orange in colour, fruity and hoppy, but also malty in the mouth. It as a dry and bitter finish, and special malts used for mashing were used to give body to this beer with a very low-alcohol content.
SUMMER OF HOPS – MERINGUE
Brewed during summer 2017, it is a hoppy pale ale with lactose, vanilla and aromatic hops, a very fruity character to recreate the feeling of a fruity meringue without having to use fruits.
DECK, PERLE & DONOHUE MAIBOCK
An amber lager brewed in collaboration with the brewery Perle based in Strasbourg. It was brewed in our brewery with Perle’s yeast, Caramel Vienna malts and three types of german hops: Magnum, Blanc and Monroe, for a balanced but juicy hoppy character.
Bocks are strong german lagers. For the first days of summers in the month of May, brewers used to traditionally brew Maibocks slightly less strong, amber in colour, when traditional Bocks are usually darker.
ANNIVERSARY STRONG IPA 2017
Strong IPA with copious amounts of Summit, Mosaic, and Sorachi Ace hops. Think: dank orange marmalade. Brewed for our 1st Anniversary.
ANNIVERSARY SPARKLING GOLDEN ALE 2017
Brewed to celebrate our three-year anniversary, a golden ale with rustic and sweet hops and a limited bitterness. Refermented in bottles and kegs with Champagne yeasts to reinforce the dry finish and complexity.
ANNIVERSARY WHEATWINE 2017
Brewed to celebrate the three-year anniversary of the brewery, a strong beer (9%) wheat based, with rich tones of malts and caramel, bread and raisins. Candi Belgian sugar adds depth. Deep and dark amber in colour.
Brewed in collaboration with Earth Bread & Brewery from Philadelphia, PA, USA. Cool fermentation begets a clean but rich “lageresque” nose, with light sulfur, spice and bread. Highly restrained and subtle yeast character throughout, bready malt character and smooth body. A touch of honey sweetness on the finish completes this nod to modern French bieres de garde.
