C&rsquo;est ce profil particulier qu&rsquo;on a cherch\u00e9 \u00e0 recr\u00e9er dans Ombre et Lumi\u00e8re.<\/p><p>\u00a0<\/p><p>Acide, parce que le d\u00e9tail du processus de fermentation restait assez m\u00e9connu: on n&rsquo;a compris la pr\u00e9sence et le r\u00f4le exact de la levure qu&rsquo;au XIXe si\u00e8cle, gr\u00e2ce \u00e0 l&rsquo;invention du microscope, \u00e0 la capacit\u00e9 d&rsquo;isoler une seule souche de levure, puis aux travaux de Louis Pasteur. Avant cela, la bi\u00e8re fermentait \u00e0 partir d&rsquo;une sorte de levain: on r\u00e9cup\u00e9rait les levures d&rsquo;une fermentation pr\u00e9c\u00e9dente et on r\u00e9ensemen\u00e7ait le nouveau brassin avec. A l&rsquo;int\u00e9rieur de ces levains, diff\u00e9rentes levures et bact\u00e9ries, qui cr\u00e9aient des fermentations alcooliques, mais aussi lactiques et et ac\u00e9tiques, qui peuvent donner des acidit\u00e9s pronon\u00e7\u00e9es.\u00a0<\/p><p>\u00a0<\/p><p>Fum\u00e9, parce que la technique historique de s\u00e9chage du malt \u00e9tait la fumaison. Aujourd&rsquo;hui, le s\u00e9chage des grains d&rsquo;orge pendant le maltage est fait en soufflerie d&rsquo;air chaud, mais il y a quelques si\u00e8cles, c&rsquo;\u00e9tait syst\u00e9matiquement dans des fumoirs que le maltage se terminait. Et bio, toujours.\u00a0<\/p><p>Pour le c\u00f4t\u00e9 fum\u00e9, on a utilis\u00e9 du malt de bl\u00e9 fum\u00e9 en provenance de la micromalterie\u00a0<a style=\"background-color: #ffffff;\" href=\"https:\/\/www.maltinpott.com\/\">Malt&rsquo;in Pott<\/a>, malterie bio savoyarde. L&rsquo;utilisation de bl\u00e9 plut\u00f4t que d&rsquo;orge permet d&rsquo;apporter une fra\u00eecheur l\u00e9g\u00e8rement acidul\u00e9e \u00e0 la bi\u00e8re.\u00a0<\/p><p>Pour le c\u00f4t\u00e9 acide, on s&rsquo;est amus\u00e9 \u00e0 partir de yaourt bio en provenance du\u00a0\u00a0<a style=\"background-color: #ffffff;\" href=\"http:\/\/ledomainedebeaulieu.com\/la-fromentellerie\/decouverte-de-la-ferme\/\">Domaine de Beaulieu<\/a>\u00a0(77). On a ensemenc\u00e9 une petite quantit\u00e9 de mo\u00fbt de bi\u00e8re avec ces yaourts, pour lancer une fermentation lactique: les ferments pr\u00e9sents dans les yaourts convertissent le sucre issu du malt en acide lactique.
