Deux passionn\u00e9s de bi\u00e8re avec qui nous \u00e9tions contents de partager cette excursion.<\/p><p>Arriv\u00e9s en Alsace, nous retrouvons Erwin Sohn, de la <a href=\"http:\/\/www.comptoir-houblon.fr\/\">Cophoudal<\/a> (Coop\u00e9rative des Producteurs de Houblons d\u2019Alsace), \u00e0 l\u2019entrep\u00f4t de la coop\u00e9rative, \u00e0 Brumath. Fond\u00e9e en 1939, la Cophoudal comptait \u00e0 l\u2019\u00e9poque 360 producteurs, et 58 producteurs aujourd\u2019hui. La r\u00e9colte a commenc\u00e9 depuis quelques jours et les producteurs apportent le houblon, d\u00e9j\u00e0 s\u00e9ch\u00e9, par sacs de 50kg et remorques enti\u00e8res. Il faut 10 ans pour valider pleinement la viabilit\u00e9 d\u2019un houblon avant sa commercialisation, mais nous repartons avec un \u00e9chantillon du houblon qui nous aura le plus marqu\u00e9 lors de notre \u00ab\u00a0d\u00e9gustation\u00a0\u00bb (on ne go\u00fbte pas vraiment le houblon mais on le sent, en le frottant entre ses mains), le P11-11, d\u00e9licieusement floral et citronn\u00e9, que nous avons utilis\u00e9 pour un f\u00fbt sp\u00e9cial lors de <a href=\"https:\/\/www.facebook.com\/media\/set\/?set=a.331496723690684.1073741834.213083395532018&amp;type=1\">notre barbecue \u00e0 l\u2019atelier<\/a>. C\u2019est le p\u00e8re de S\u00e9bastien qui nous fait visiter l\u2019impressionnante installation dans laquelle les houblons sont s\u00e9par\u00e9s des lianes, puis s\u00e9ch\u00e9s pendant plusieurs heures avant d\u2019\u00eatre envoy\u00e9s \u00e0 la coop\u00e9rative. Il nous parle avec fiert\u00e9 et passion du syst\u00e8me de s\u00e9chage automatique r\u00e9cemment mis en place, mettant fin \u00e0 des d\u00e9cennies de remuage des houblons \u00e0 la fourche, sous une temp\u00e9rature de 60\u00b0C. La famille Holtzmann produit 8 vari\u00e9t\u00e9s de houblons, et produit m\u00eame depuis peu <a href=\"http:\/\/www.brasserie-holtzmann.fr\/\">plusieurs bi\u00e8res<\/a>. Pendant notre visite, c\u2019est le houblon Strisselspalt qui est s\u00e9ch\u00e9 et le parfum v\u00e9g\u00e9tal et \u00e9pic\u00e9, presque aill\u00e9, qui a envahi l\u2019endroit est impressionnant. Les lianes de houblon peuvent mesurer jusqu\u2019\u00e0 10m de haut et compter 7000 fleurs utilisables pour le brassage. Il nous emm\u00e8ne ensuite sur une de ses parcelles, o\u00f9 le houblon s\u2019\u00e9tend \u00e0 perte de vue. Il y a une seule r\u00e9colte de houblon par an, et la conservation pour permettre le brassage toute l\u2019ann\u00e9e est donc cruciale. Mais les ar\u00f4mes du houblon frais non s\u00e9ch\u00e9 sont impressionnants, et l\u2019id\u00e9e de pouvoir, une fois par an, brasser une \u00ab\u00a0bi\u00e8re de r\u00e9colte\u00a0\u00bb est particuli\u00e8rement int\u00e9ressante pour nous.\u00a0 C\u2019est la brasserie <a href=\"http:\/\/www.sierranevada.com\/\">Sierra Nevada<\/a> en Californie qui a remis au go\u00fbt du jour la tradition des bi\u00e8res au houblon frais non s\u00e9ch\u00e9 (\u00ab\u00a0<a href=\"http:\/\/www.chow.com\/food-news\/93483\/what-is-wet-hop-beer\/\">wet hop\u00a0<\/a>\u00bb) en 1996, et depuis de nombreuses brasseries am\u00e9ricaines proposent des \u00ab\u00a0harvest ales\u00a0\u00bb au houblon frais. Nous ajouterons le houblon frais environ 23h apr\u00e8s sa r\u00e9colte, dans deux grands sacs flottants, surtout en mileu et fin d\u2019\u00e9bullition, pour garder le maximum d\u2019ar\u00f4mes.<\/p><p>Nous sommes heureux de vous pr\u00e9senter aujourd\u2019hui le fruit de notre voyage\u00a0: Strisselspalt pr\u00e9sente une couleur automnale et des ar\u00f4mes floraux, avec des notes d\u2019\u00e9pice et des touches d\u2019agrume. Elle pr\u00e9sente un go\u00fbt houblonn\u00e9 tr\u00e8s rond avec une amertume discr\u00e8te.
